And with the other half of the apple, I made Apple and Marmalade Hat. (Which is the same as Apple Hat, only minus the dried fruit and lemon and plus orange marmalade.)



Despite being a suet-crust pudding rather than a steamed one, it is, as the number of servings in the recipe indicates, surprisingly less filling — presumably because it's hollow and full of cooked apple rather than pudding mixture (which is why it completely collapses when you cut into it!)

I do love steamed puddings. We have them so rarely now...

I did this one in the pressure cooker, but I'm not sure it saved any time -- it would only have been an hour or so under normal steaming, and after I'd steamed it without the weights for ten minutes, brought it up to pressure (which takes a surprisingly long time), pressure-cooked it for twenty-five, then allowed it to reduce naturally to room temperature again, an hour had elapsed.

Theoretically less, in practice (since steaming just consists of bringing the pan to the boil and keeping it gently bubbling, using the same minimum gas ring setting as the pressure cooker) probably not :-(
