Khoresh karafs -- the verdict

Verdict on the khoresh karafs: even made with inauthentic pig's heart instead of lamb, it was still very tasty. (And it almost certainly benefited from being made in advance and left in the fridge for a day.) It would probably have been better with lamb, but you use what you've got. (Which reminds me that I have some rhubarb and had intended to try the recipe for khoresh rivas in the same booklet -- maybe I ought to try this vegetarian version!)
I tried making a tahdig to go with it, but with less success than on my last attempt; it was tasty (and so it should have been, with that much butter in!), but the crunchy bit stuck to the bottom of the pan instead of turning out in a neat moulded shape, and had to be scraped out and sprinkled over the rest. The quantities were pretty much guess-work, and I probably didn't cook it for long enough -- I was terrified of burning the rice.
NB I went to the library today (for the first time in two years) and managed to upload Ch2 of "High City on a Hill" onto fanfiction.net using their computers, a process which took 45 minutes by the time I had battled through two-factor authentication, spot-the-boat anti-robot pictures so small you could barely see if it was boats in a creek or a traffic jam, and FFNet's document management system. So we shall see if it gets any better reception there.
Unsurprisingly, my FFNet viewing stats were way down, since I hadn't updated anything in two years (although oddly enough the stats for my Rescue Raoul! community collection were quite high). But I had forgotten just how much better the FFNet stats pages are than AO3 stats ;-p
(It's depressing to be able to see that nobody got beyond the first few chapters of any of my long stories this month, for instance; they have hits, but they peter out well before the end, or skip straight to the final chapter, presumably in order to find out whether the ending features the 'right' pairing or not. Clearly it didn't!)
Interestingly, at some point since December 2020 the views versus visits bug appears to have got fixed... unless I'm so used to its not working that I simply forgot to look!
I was able to access most of the site from my own computer when I got home (forums, fandom listings, user profiles and even reviews on stories -- only the actual text of the stories was blocked(!)), but it has all gone again for the moment. I do still seem to get these occasional windows of access; most of the time I just don't bother trying :-(
Oh, and inevitably I managed to spot a typo in Ch2 ("indulging grandparent" for "indulgent grandparent") the moment I saw it formatted on a new website... despite having read through the text multiple times in its word-processed form, here on my blog, and as published on AO3!

Date: 2022-05-29 05:14 pm (UTC)I did another rice-with-tahdig to go with my vegetarian khoresh e rivas, which I have to say was nicer than my meat-based khoresh kalafs... at least when made with pig's heart! And that tahdig turned out very nicely in one piece; I was a bit more drastic about cooking it on a relatively high temperature to 'set' the bottom layer and less nervous of burning it. I also tried the trick of immersing the hot pan in cold water before inverting it, although the base of the (heavy) pan was so hot that it was still quite warm afterwards, and I can't help feeling the abrupt contraction must have put a bit of strain on the metal.
Anyway it came out in one piece. It missed the edge of the plate and shed bits off the side, but it did turn out!
