Elderberry and apple pie

I had some left-over egg custard (one egg and the end of a tin of evaporated milk) from yesterday, and decided it was time to defrost some of the fruit I collected this autumn and have a nice hot pie on a cold November afternoon. So I made an elderberry and apple pie, with possible extra protein ;-p
The apples are unpeeled, as they were windfalls where I'd simply cut out all the bruised bits and frozen the result (and thus have remained in visible chunks rather than breaking down and leaving isolated bits of skin behind as cooking apples would). I didn't put any sugar in the filling, as I couldn't remember whether I'd sweetened the berries or not when I cooked them before freezing! It tasted fine, though, even though those apples were disappointingly bitter when raw. I did sprinkle quite a lot of sugar over the top of the pastry; it's Jamaican brown sugar rather than Silver Spoon white beet sugar, so not quite so decorative in appearance...
I have also taken a bag of windfall plums out of the freezer with the idea of making sourdough plum upside-down cake -- mainly because I'm a bit worried about my sourdough starter, which hasn't been used in a long while and got left out of the fridge overnight by mistake. If it *doesn't* come back to life... well, we shall find out tomorrow morning.
