Tortellini lasagne
27 April 2022 12:39 amMy attempt at home-made pumpkin tortellini (with fresh pasta sheets rolled out by hand, as I don't have a pasta machine) was a predictable failure, albeit not for any of the more usual reasons but because I got my recipe preparation timing stages wrong, and the pasta sheets ended up being left to dry for an hour and a half *before* the stuffing was put into them instead of after. Which meant that they had already hardened and were practically impossible to fold or to seal, even after moistening.
It obviously wasn't going to be possible to cook the resulting smeared and leaky tubes in boiling water, as per the recipe --the 'filling' would simply have washed away-- so I ended up layering them in a Pyrex dish, covering them with a jar of bolognese sauce, covering *that* with a layer of spinach leaves, and putting all the rest of the left-over cheesy vegetable filling (i.e. almost all of it, since I managed to get very little of the stuffing actually between sheets of pasta!) over the top and baking it in the oven. With hindsight I either should have put a layer of sauce in the bottom of the casserole, or else should have added more water before baking, since the pasta sheets remained rather dry and stuck on the Pyrex at the bottom... but it made a fairly tasty and presentable lasagne, for something that was intended to be more like ravioli :-D
