In the absence of plums, the sourdough upside-down-cake recipe also turns out to work very well with cooking apples, using the suggested techniques of raising the yeast and flour first and adding the butter and sugar creamed together afterwards :-)
Although in winter temperatures it took about 48 hours from start to finish, since it has to rise twice...
