I did another rice-with-tahdig to go with my vegetarian khoresh e rivas, which I have to say was nicer than my meat-based khoresh kalafs... at least when made with pig's heart! And that tahdig turned out very nicely in one piece; I was a bit more drastic about cooking it on a relatively high temperature to 'set' the bottom layer and less nervous of burning it. I also tried the trick of immersing the hot pan in cold water before inverting it, although the base of the (heavy) pan was so hot that it was still quite warm afterwards, and I can't help feeling the abrupt contraction must have put a bit of strain on the metal.
Anyway it came out in one piece. It missed the edge of the plate and shed bits off the side, but it did turn out!
